Couscous With Feta Cheese And Kalamata Olives
1 cup of water
2 tablespoons of butter
1/2 teaspoon of salt
1 cup of couscous
6 tablespoons of premium extra virgin olive oil
1/3 cup fresh lemon juice
1 tomato, diced
1/4 cup diced red onion
1 cup chopped fresh parsley
1 tablespoon chopped fresh mint
Salt and pepper to taste
Crumbled feta cheese
In saucepan, combine water, butter and salt, and bring to a boil. Remove from heat and stir in couscous. Cover and let sit for 5 minutes. Remove lid and stir in olive oil and lemon juice. Let sit for 5 minutes.
In large bowl combine couscous, tomato, onion,parsley and mint. Add salt and pepper to taste. Stir.
Top with feat cheese and Kalamata olives and serve.
